Ideas?

I'm thinking about breakfast on Saturday and think maybe something light and easy would be good--mainly because I'm kind of worn out. How do breakfast sandwiches sound? We could do bagels and lox or scrambled eggs on bagels or something of the like. How's that sound?

Hello Everyone... I know I said that I would post my ideas over the weekend and technically the weekend is over but, if Pope Gregory XIII, or as I call him ' Ugo ' , short for Ugo Boncompagni, had not changed the calendar, today would be Sunday therefore it is still the weekend. After spending many sleepless nights trying to create some new delights, these are what I came up with:

(1) Gary's Breakfast Pie
3 cups frozen shredded potatoes
5 Tbs melted butter
1 cup finely chopped cooked ham
1 packed cup shredded sharp cheese
1/2 cup finely onions
1/2 cup chopped green peppers
1/4 cup diced, drained pimento
Mix together: 3 eggs, 1/2 cup milk, 1/2 teaspoon salt and pepper to taste. Thaw potatoes between layers of paper towels to remove excess moisture. Press potatoes into bottom and up the sides on an ungreased 9 inch pie plate drizzled with butter. Bake at 425 ° for 25 Min's or until lightly browned - cool on wire rack. This crust can be frozen after baking.
Layer from bottom up on crust (if frozen - has been thawed). Ham · Onion · Peppers · Pimento · Cheese. Cover with egg/milk mixture. Bake at 375 ° for 35-40 min's or until set. Let stand for 10 minutes before serving.
Serve this with about 1 teaspoon of strawberry preserves on the wedge. Serves 4

(2) Gary's Southwestern Breakfast Quesadilla
6 large eggs
1 4 oz. can of green chile's
1 green onion diced
1 Tablespoon butter
1/4 cup milk
1/4 teaspoon cumin
Salt and Pepper to taste
4 oz. Pepper Jack Cheese
2 large flour tortillas
Salsa
Sour Cream

Saute green onion and green chile's in butter in a large omelet pan. Beat eggs with milk, cumin, salt and pepper. Pour egg mixture over onion and green chili, scramble slightly. In an electric skillet at 325 degrees melt a little butter and layer 1 flour tortilla with 1/2 cheese, cooked scrambled eggs remaining cheese and top with 2nd flour tortilla. Cook and flip once until both sides are golden brown and cheese is melted. Slice into four quarters and top with salsa and a dollop of sour cream

(3) Gary's Egg Casserole
10 eggs lightly beaten
1/3 cup All purpose flour
3/4 teaspoon Baking powder
10 oz Lean pork breakfast sausage, fried and crumbled
1/2 lb Monterrey Jack cheese grated
1 1/2 cups Low fat cottage cheese

Preheat the oven to 375 F. Mix the eggs, flour and baking powder together well. Add the sausage, cheese, cottage cheese and mushrooms to the egg mixture and beat well. Pour into a greased 13x9 glass baking dish. Bake for 30-35 minutes. Yields 4-5 generous servings

(4) Gary's Crispy Waffles
3 large eggs
1 1/4 cup milk
1/2 cup melted butter
1 tbs vanilla
2 cups flour
1 tbs baking powder
2 tsp sugar
1/2 tsp salt

In a large mixing bowl, beat whole eggs until thick. Add milk, melted butter, and the vanilla ... continue beating mixture for 2 minutes. Combine the dry ingredients, sift into egg mixture and beat well for 2 more minutes. If necessary, add more milk ... batter should be about the consistency of pancake batter.
Brush melted butter over the ridges of a hot Belgian style waffle iron. Ladle the batter over the hot iron and bake according to iron manufacturer's instructions (usually about 2 minutes). When done, ridges on waffle will be deep golden brown and crispy.
Top with your favorite fresh berries or sliced fruit (strawberries, peaches, poached pears, apples with cinnamon, etc) and whipped cream. Just before serving, sprinkle waffle with powdered sugar. Makes 6-8 waffles depending on the size of your waffle iron.

All of these recipes need a slight modification for organic ingredients but after spending a fortnight in my gourmet culinary lab, I need to rest for a while. I trust that you are able to insert the proper organic ingredients where needed. Please let me know if you would like to try one of my new creations.

Hi Everyone ... As much as I love breakfast with the crew, I'm afraid that I will have to miss the next get-together. This Saturday is the Men's Pentecost Prayer Meeting, which starts at 10:00 am, and will likely run until about 12:30 pm. We could forego the usual breakfast for an afternoon tea???

And unfortuately, I will also miss the breakfast meeting on Saturday, June 2, as I have to work. I've only worked about four Saturdays in the last 7 years, and June 2 happens to be one.

I know it's difficult, but please try ... just try ... to carry on with me. :^(

Breakfast this week, anyone? It should be a lovely day for a get-together. I'm proposing, yet again, oatmeal or some other hot cereal. I've really got a hankering for it. That's right. I said hankering. If I'm driven to such silly language, I must really, really want oatmeal or oat bran, etc.

Does anyone else have anything else in mind?

It's that time again for ideas for Saturday's breakfast, but I have a problem. I've got plans to attend a birthday lunch at noon on Saturday, so I'm probably going to have to either have breakfast early and be done by 11:00 or not attend. Unless someone else wants to host this week's culinary gathering, and then it makes no difference where I'm going and when.

If we do have breakfast at my place early on Saturday, I'm still craving oatmeal or some other variety of hot cereal. If anyone else thinks this sounds tasty, we could add in a variety of dried fruit and maybe also have scrambled eggs or something similar. I'm all about light this week.

So, what do you think? Is anyone else craving something?
