Hey everyone,

I was looking around for some brunch ideas and I came across a recipe that seems very tasty. Breakfast Enchiladas! I have looked over the recipe and it seems like it would be very easy to make a healthier version. The only small hang up is that it has to be prepared the night before and then thrown in the oven the day of (that could also be a nice thing too). It can be dressed up with salsa and maybe some guacamole etc... Also, there are many rave reviews from other brunch lovers like ourselves. Well it's an idea, let me know what you think.

Possible Acoutremonts:
Sour cream
Salsa

What an excellent submition, Mr. Palm. It's a fresh idea, can be modified to be healthy, and easy enough to concoct. Shall we divvy up ingredients so that we have everything we need?

You can count on me for:

Tortillas
Eggs
Cheese
Goat's Milk (after reviewing the recipe, it may be a good idea to eliminate the half and half and only use goat's milk.)
Hot Pepper Sauce
Flour
Goat Yogurt (sour cream)
Garlic

If Au Laits sound good again, I can make those. Any other coffee drinks are welcome if any are tired of them.

I second Ray's cry for more sweet potatoes, which should suffice as a semi-sweet addition for those going through withdrawel.

Sam, I think your sausages would be a great replacement for the ham in this recipe.

That leaves these needs:

* 3/4 cup sliced green onions
* 3/4 cup chopped green bell peppers

And any other goodies that anyone would care to add.

By the way, for those interested in obtaining a Waffle House Mug to showcase their commitment, the Niles location has 3 for sale at the price of $4. (Not only do I supply the cheese for or meals, I supply the cheese for our club as well.)

Anyone buying ingredients should drop them off at my place tomorrow around 6pm so that Jorry and I can start constructing the burritos.

Hello, I am very exited, I looked up goat milk half and half and found Meyenberg Evaporated Goat Milk, sold at Giant Eagle, Walmart, and WildOats (maybe Cindies)
